About Busuioaca de Bohotin it is said that it was the wine of Ștefan the Great, that it was very little initially, only a few dozen logs and that very little wine was made and taken out only at special events, which made him memorable, amazing. In terms of production, after gravitational decantation for 24 hours, the grape juice is fermented in 2000L vessels at 12° C for 18 days. To achieve the sugar content the controlled fermentation is stopped by cooling to 5° C. Thus, identity for the region of Moldova, Busuioaca de Bohotin is a wine with a special body, with aromas of basil, rose petals, honeycomb, wild strawberries, but also a unique aroma of Honeysuckle (Mother of God’s Hand). It can be served very well chilled (8° C), with Mediterranean cuisine: a risotto with seafood or soft cheeses or fine pies, accompanied by many friends and long conversations.

About the winery

Averești

Starting 2010, in Averești, the invigoration of viticulture to exceptional standards began. With an investment of over 20 million euros in plantations and wineries, Domenerii Averești owns 650 ha of noble vines and one of the largest Busuioaca de Bohotin plantations in Romania (105 ha). To meet the highest standards, a new winery has been equipped with state-of-the-art technology and divided into four main areas: fermentation, with a capacity of 1 million liters, storage, with a capacity of 5 million liters, bottling, with a capacity of 1,200 bottles per hour and the wine maturing area in bottles and barrels.The high altitude, the more acid forest soil, the cool climate and the southern exposure with about 4,000 hours of sunshine annually give birth to an ideal microclimate of the Averești vineyards. They preserve the acidity and favor the complexity of the aromas in grapes with a quality almost impossible to obtain in other areas of the country.
